Mouse sensitivity bug when controller plugged in
I launched the game with an Xbox controller connected to my PC and disconnected it immediately after the game started.
After doing this, my mouse sensitivity became stuck at what appears to be the default value, which is much higher than the sensitivity I normally use. The settings menu still displayed my configured sensitivity, but adjusting the value had no effect on the actual mouse sensitivity in the game.
After restarting the game the issue was resolved.
